Fried Egg Sandwich

Ingredients


  • 1 cup mayonnaise
  • 1 garlic clove, chopped
  • 1 Tbsp lemon juice
  • 3 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh tarragon
  • 1 Tbsp chopped fresh chives
  • 1 tsp lemon zest
  • 1 Tbsp butter
  • 4 slices Canadian bacon
  • 4 whole eggs
  • 4 slices American cheese
  • 4 brioche buns, or other soft, buttery buns, halved and lightly toasted
  • Salt and pepper, to taste
  • 4 leaves butter lettuce
  • 4 thick slices tomato


Steps


  1. 1-Make the herb aioli. In a medium bowl, mix together the mayonnaise, garlic, lemon juice, parsley, tarragon, chives, and lemon zest. Refrigerate until ready to use.
  2. 2-In a large skillet, melt the butter over medium heat. Add the Canadian bacon and cook each side until slightly caramelized, about 5 minutes per side. Transfer the cooked slices to a plate lined with paper towels.
  3. 3-Lower the heat of the skillet to medium-low. Add the eggs and cook to desired firmness. Just before the eggs are done, place a slice of American cheese over each egg and cook until melted, about 30 seconds, and then remove the pan from the heat.
  4. 4-Spread 1 Tbsp of herb aioli on each half of the toasted buns. Place on egg on the bottom half of each bun. Season the eggs with salt and pepper. Top with lettuce, tomatoes, and Canadian bacon. Close each sandwich and serve. Makes 4 sandwiches.
